Avocado sauce is one of my favorite things to put on just about everything, especially Mexican food and chicken!
1 large , ripe avocado
1/3 cup sour cream or yogurt
1/2 small clove of garlic
Juice of 1/2 lemon
1 - 2 tbsp olive oil
1/2 cup (packed) coriander / cilantro, roughly chopped
Salt and pepper to taste
1. Combine all ingredients in a food processor, blend until smooth. Use water to adjust the consistency as required.
2. Adjust lemon or lime to acquired taste. This needs bit of tang if you want to use this sauce with bold food types like Mexican food for example.
3. Keeps for about 4 days in an airtight container.
